Capreolus Distillery is the remarkable creation of Barney Wilczak – Owner and Distiller. In his old lean-to greenhouse from his childhood home in the Cotswolds, Barney seeks to do something special. his stated goal is to `capture the innate essence of fruit from the surrounding area`. For Barney, his three-person team, and his dog; `nothing we do is about the production of alcohol; it is first, foremost and finally the pursuit of perfection preserved.`

The alcohol produced to carry this perfection is gin and fruit distillates. For his award-winning gin, 34 botanicals come together to form a spirit of immense complexity and depth; whilst his Eaux de Vie are made to provide the most honest expression of fruit possible. The way Barney goes about this, is to jam-pack each bottle of Eau de Vie with as much fruit as possible - up to 45kg of fruit per finished litre. As you can imagine, this means production is tiny, with only a handful of bottles produced at a time. Barney has even had a specially designed set of stills made to lower yield and increase quality, testament to his desire to create the best possible products. For the gin, only 200 bottles are filled at every batch. Even the bottling is meticulously done by hand with carbon-neutral labels made with a traditional letter press and hand-signed by Barney.
