The Stoddens are one of Germany`s greatest Pinot Noir producers and even at this entry level they like to concentrate on structure and texture rather than simple fruit. This wine comes from three of their south and south-east facing vineyard sites. It is cool fermented in steel, then goes through malolactic fermentation and ageing in 1000 litre old casks. It is taut and mineral and you should drink it with the usual suspects of birds, both wild and domesticated as well as game fish and soft cheeese. (CW 20/01/17)
