A crisp. classic expression of Santorini Assyrtiko from Vassaltis, with ripe apple, quince, grapefruit and gooseberry aromas, with hints of fig and freshly-cut grass. The palate is deft and zesty, with lemon and lime on the fruit and a hint of autolytic influence on a long, bracing finish. Well-balanced, refreshing and superb with fish dishes; a delight. Stony, mineral and salty. Those characteristics outshine the fruit but there is no lack of fruit core, it is just not the dominant factor. Creamy, grainy texture. Lots of freshness and drive. So salty on the long finish. 16.5 points
