A rare wine - Tissot prefer to retain their limited plantings of Savagnin for Sous Voile and Vin Jaune styles. Ouille styles (topped-up, so the flor doesn`t grow on the wine in barrel) allow the Savagnin grape (closely related to Trebbiano and Ugni Blanc through a shared ancestor, Traminer) to express itself without the sherry-like flavours of flor. This is a fairly natural expression, dominated by natural yeast-derived flavours which enhance the citrus character of the grape into a ripe, zesty, floral wine with plenty of fruit-complexity and a marmite umami note in the background.
